Grilling is an art that requires time, patience, and lots of practice. The directions in my grilling recipes are deliberately vague, so you can use either a charcoal or gas grill, depending on your preference.

I like to use hardwood lump charcoal, but cooking with hardwood is more difficult than with gas or briquettes.  An useful book on the subject is Low & Slow, by Gary Wiviott. Although it focuses on barbecue, it’s got helpful instructions on cooking with hardwood charcoal.
